Huntsville will soon get a taste of Cajun made seafood fresh from Louisiana when Arnaud’s Cajun Kitchen opens this week.
Floyd and Brittany Arnaud will serve their Cajun specialties from a food trailer to be located at 2615 Montgomery Road next to the Polarmatic Ice Machine and will open from Wednesday-Saturday from 11 a.m. to 8 p.m. Their specialties will include boiled and fried shrimp, boiled crawfish, gumbo, crawfish etouffee, grilled boudin, po-boys, meatball stew and fried catfish.
They will sell their crawfish by the pound boiled or alive with a side of potatoes, corn and Cajun sausage. After crawfish season is over in early June, the Arnauds will focus more on serving plate lunches and having a new special every week along with chicken and shrimp salads as a healthy alternative.
The Arnauds get their live crawfish from Crowley, Louisiana and keep them fresh in their cooler for three to four days until they sell them and need to make another trip for more. Floyd Arnaud said he hopes the demand for crawfish will be so high that he will be making trips to get more crawfish every day.
“We moved to Texas last December after serving in a ministry called Freedom Challenge, which is a faith-based drug and alcohol rehabilitation program,” Floyd Arnaud said. “Brittany and I served there for seven years and finally decided that we needed to do something new and different. We know that we are taking a risk in doing this, but Cajun food is our specialty. We believe that this will be a good way for us to meet people and witness to them, as well as feed them good food.”
On April 4-5, the Arnauds tried their luck by bringing 250 pounds of crawfish to Huntsville and selling them at their future location. They ended up selling 200 pounds and hoping to sell many pounds more when they open this weekend while providing a fun family environment with a mixture of Zydeco and Christian music. The couple hopes to bring a unique flavor to that people may not be accustomed to having.
The couple and their two children are currently living in Onalaska with Brittany Arnaud’s parents and are hoping to move to Huntsville after they sell their house in Bastrop, Louisiana. Brittany Arnaud and her father have owned the Polarmatic machine for four years and believe it is an excellent area for their food trailer so they can maintain both the machine and the new business. Brittany Arnaud believes they will have a lot of new tastes and opportunities to offer Huntsville.
“We are hoping to have a suggestion board that our customers can write on if they want something Cajun that they have never had before and want to try,” Brittany Arnaud said. “As long as it’s feasible, we will bring it in as a special for the week. We are also available to cater for clubs or for anyone who needs us for any event that they are having. We are hoping to get involved with tailgating at football games and serving our food there. We would like to provide some kind of discount for students, we just aren’t sure yet what we will be able to do.”
After their grand opening and getting settled into their new business, the Arnaud’s will be looking into to expand their property to the three acres behind where their original location is and build a pavilion with tables, chairs, air conditioning and bathrooms. Floyd Arnaud hopes to offer specialty meats that people have not had and are not offered in Huntsville.
The Arnauds hope to open the restaurant Friday or Saturday, depending on the status of their food trailer.
